The Cacao Trees

The cacao trees grow naturally in their ideal environment under the forest canopy of the Amazon where they have grown for hundreds of years. The surrounding ecosystem in the area includes rainforest, rivers, mangroves and mountains. The plants grow naturally, just like gum trees grow in Australian national parks. All that is required is sunlight, rain and the naturally rich soil. There is no deforestation and an environmental equilibrium is maintained - the ultimate relationship between the farmer and nature. 

The Process

The cacao trees are pruned fortnightly by hand with a machete. When the cacao pods are ripe with full colour, they are hand-picked. The cacao pods are cut open with a machete to remove the cocao pulp and seeds. The pulp and seeds are put into large wooden crates, the pulp ferments and the seeds remain. The seeds are then put onto a roof for 5 days to dry. The seeds are roasted and packed. And then turned into discs of raw cacao. The raw cacao is blended to create this incredibly tasty Premium Venezuelan Chocolate.
